2007 Cabernet Sauvignon (Library Wine)

Tasting Notes:

Our 2007 Xurus Cabernet Sauvignon is dense, ruby/purple colored with a truly expressive, more Bordeaux styled with notes of wild mountain berry fruit, such as huckleberries and ripe blackberries accompanied by cooking spices ;bay leaf, cloves, cinnamon and Jamaican pepper with a hint of underlying chocolate covered candied orange-peel. Beautifully textured and sensationally layered mouth-feel, a wine with power and depth yet elegant, rich and concentrated. It is firmly structured with generous tannins and a lively acidity that makes for good ageing potential. The finish is long and velvety with tremendous balance and mineral notes. Can be enjoyed now, but should be at its best in 3 years and will keep for 10-20 years.

2008 Cabernet Sauvignon (Library Wine)

Tasting Notes:

The color of our 2008 Xurus Cabernet Sauvignon is reminiscent of pomegranate with a slightly blue hue, indicating its youth. The nose still shows that same wild mountain-berry fruit that we found in the 2007 with huckleberries, lingonberries and juicy black cherries with a spicy undertone of licorice and great minerality so typical to our Sonatina Vineyard. Our Cabernet also exhibits wonderful floral aromas of violets and jasmine followed by hints of blood orange, cocoa powder, and light notes of cedar wood and pencil shavings. This is a wine with tremendous layers, great concentration yet balanced with a velvety, lingering finish. The 2008 has enough acidity to give it the potential for long cellaring. This is a “Vin de garde” that could be enjoyed now, but should be at its best in 3 years and will keep for 10-20 years.

2009 Cabernet Sauvignon

Tasting Notes:

The 2009 Xurus Cabernet Sauvignon shows the color of dark pomegranate juice. Out of the glass come blackberry, blueberry and ripe black cherry aromas with cooking spice and outstanding minerality, like crushed rock and Bakelite, followed by charming hints of cedar wood and sweet citrus with whiffs of orange and pink grapefruit. The wine is young and vibrant, lively and full of energy yet full-bodied with great focus, volume and length. A “Vin de garde”, with a tannic structure, that will allow cellaring for a long time, but if you wish to drink it now, we would recommend that you decant it at least 6 to 8 hours prior to enjoying it.

Technicals:

  • Varietal: 100% Cabernet Sauvignon from Lake County
  • Alcohol: 13.8%
  • Winemaking: Berries were handpicked on September 14, 2009, all de-stemmed prior to mechanical sorting on the “Le Trieur” shaker table, followed by berry-by-berry sorting with a crew of 12. The must is then cold soaked for 5-6 days, followed by the alcoholic fermentation and extended maceration.
  • Cooperage: 22 months in 75% new French oak barrels
  • Production: 485 cases
