Winemaking

The fruit of the Sonatina Vineyard is harvested by hand in the cool of the early morning. Only the best clusters are chosen, and the berries are hand-sorted at the winery before they are gently crushed to release their juice. Our wine spends approximately 18 to 24 months in 100% French oak barrels to enhance the nuances of the wine without overpowering its elegant flavors.
